200ml whipping cream

Pour milk and vegetable oil in a bowl. Mix well

Sift in instant coffee powder and all purpose flour then whisk evenly

Separate 5 egg yolks into the mixture and 5 egg whites into another mixing bowl

Whisk the egg yolks until the mixture becomes smooth

Preheat oven for at least 10 minutes

Combine the sugar and a teaspoon cream of tartar into egg whites

Beat the egg whites on high speed for 1 minute +/-

Then slow it down with low speed for 30 seconds +/-

Whip the egg whites until fluffy, shiny and reaches a soft peak

Once it becomes white and fluffy, transfer half into the mixture

Whisk gently then slowly fold it in with another half of the mixture

Line the pan with baking paper with all four sides meeting in corners

Cut a slit on each corner and fold in the corners

Pour the mixture onto the baking pan and spread evenly

Give the tray a few taps to release any trapped air bubbles

Bake in the oven for 25-30 minutes

Remove the cake and bang the tray on the counter to prevent shrinkage

While waiting, let’s make a bowl of coffee using instant coffee powder

Pour the whipping cream in a bowl then whisk and add in sugar later

Combine the mascarpone cheese onto the bowl and whisk it for 2 minutes

While the cake is slightly warm, peel off the parchment paper

Transfer the cake to a large clean baking paper

Spread the mascarpone mixture on the surface of the cake

Quickly dip each ladyfinger into the coffee and place on the cake

Roll the cake all the way, ending with the seam side facing down

Place into the fridge to set for 6 hours or overnight

Dust the top layer with cocoa powder for finishing
