Line a baking tray (45 X 37 cm) with parchment paper.

Spread the batter evenly onto the prepared baking tray.
Bake for 12-15 minutes until golden and springy.
Prepare the syrup by mixing coffee, sugar, and Amaretto liquor in a bowl.
In a separate bowl, beat mascarpone cheese, icing sugar, instant coffee, and vanilla extract until smooth.
In another bowl, whip the cream with icing sugar until soft peaks form.
Combine the whipped cream with the mascarpone mixture until well blended.
Once the cake is baked, remove from the oven and let cool slightly.
Dust a clean kitchen towel with icing sugar.
Invert the cake onto the towel and peel off the parchment paper.
Roll the cake tightly with the towel and let cool completely.
Unroll the cooled cake, brush with the coffee syrup, spread the mascarpone mixture evenly, and re-roll gently.
Chill in the refrigerator for at least 2 hours before serving.
