This dish beautifully combines creamy textures with the warmth of spices, making it a beloved comfort food. Today, it's enjoyed not just in Turkey but also in various brunch spots worldwide, often adapted with local ingredients or served with different types of bread.

Put 4 eggs in a saucepan and add water and 1 tablespoon of vinegar.
Let the eggs cook for 12 minutes.
Cut 1 purple onion.
Heat a skillet with 1 tablespoon of milk butter and add the chopped onion.
Grate 2 tomatoes and add them along with the onion in the skillet; mix.
Add 1/2 yellow bell pepper and 1/2 red bell pepper, both cut, and mix.
Add 2 cloves of garlic and mix again.
Season with salt, pepper, paprika, and turmeric to taste; mix and cook for 2 minutes.
Cut the cooked eggs in half.
Return to the frying pan and distribute the eggs over the ingredients.
Add 70g of grated Parmesan cheese and cook until the cheese melts.
Finish with oregano to taste.
