Add handfuls of garlic cloves to the food processor, covering the blades.

Turn on the food processor and let it chop the garlic until it's stuck to the sides.

Remove the lid and scrape the sides of the bowl to ensure even chopping.

Replace the lid and blend again until it reaches a paste-like consistency.

If using a blender, add about 1 cup of garlic cloves and blend until the garlic is no longer moving.

Turn off the blender, remove the lid, and scrape the sides with a spatula.

Put the lid back on and blend again, stirring the garlic at the bottom as needed.

For a smoother texture, add a little olive oil and blend again until desired consistency is reached.

Store the garlic paste in a glass container, mason jar, or zip bag in the refrigerator for up to two weeks, or freeze for longer storage.
