Line a baking tray (25 cm by 30 cm) with baking paper using a little olive oil to help it stick down.

Preheat the oven to 180°C.

Take ice cream that has been at room temperature and mash it in a bowl to make it easier to shape.

Put the mashed ice cream back in the freezer while preparing the sponge.

Whisk together 3 free range eggs and 100 g of castor sugar until the mixture is about triple in size and leaves a trail when lifted.

Sift in 100 g of plain flour and carefully stir it in, going around the edge and then in the middle until fully combined.

Pour the batter into the lined baking tray and level it out.

Bake in the oven at 180°C for about 10 to 12 minutes until it springs back when touched and is lightly colored.

Once baked, turn the sponge out onto a surface dusted with castor sugar and let it cool.

Spread homemade plum jam generously over the cooled sponge.

Place the previously prepared ice cream along one edge of the sponge and roll it up tightly using baking paper to help shape it.

Neaten up the edges of the Arctic roll and serve immediately, freezing any leftovers.
