Mix 1 cup milk with 1/2 cup sugar, 1/2 cup brown sugar, and 3/4 cup cocoa until lumps are gone. Mix in 2 cups cream, 1/2 teaspoon vanilla, and 1/8 teaspoon salt. Whisk until combined and chill overnight in the refrigerator.

Set up the ice cream maker and pour the chocolate mixture into the machine. Freeze until properly frozen, then transfer to a chilled storage container and freeze for 24 hours.

Preheat oven to 400°F. Butter and line a cookie sheet.

Separate 6 egg yolks and 6 egg whites into two bowls. Add 2/3 cup sugar to the egg yolks and beat until ribbon stage. Clean beaters and beat the egg whites until stiff peaks form.
