1/2 cup lime juice
1/2 cup lemon juice
2 teaspoons salt
1 teaspoon cumin
1 teaspoon oregano

Chop garlic and onion into a paste using a food processor or mortar and pestle.

Warm 1 and 1/2 cups of olive oil to about 220 degrees Fahrenheit.

Lower the oven temperature to 300 degrees Fahrenheit and cook the pork for about 25 to 30 minutes per pound, approximately 6 hours for sliceable pork or 8 hours for pulled pork.
