Start by making the pie crust using a food processor.
Add 2 sticks of butter, 2.5 cups of flour, 1 teaspoon of salt, and 1 teaspoon of sugar to the food processor.
Pulse until the mixture is sandy and combined.
Add 0.25 cup of really cold water and blend until the dough can be pinched together.
Divide the dough in half, wrap in plastic wrap, and refrigerate until ready to use.
Roll out one disk of dough and place it into a regular pie plate.
Pour 1 cup of water into the unbaked pie crust.
Mix 0.75 cup of sugar with 3 tablespoons of all-purpose flour and stir until combined.
Sprinkle the sugar and flour mixture evenly over the water in the pie crust.
Drizzle 1 tablespoon of vanilla extract over the water.
Top with 4 tablespoons of butter cut into pieces.
Bake in a preheated 400-degree oven for 15 minutes.
Reduce the oven temperature to 375 degrees and bake for an additional 20 to 25 minutes.
The pie is ready when it is bubbling and golden, with a jiggle in the filling.
Let the pie cool for about 10 minutes before refrigerating for at least an hour.
