Bourbon Chicken

2 lb chicken breast
2 tablespoons apple cider vinegar
1/4 cup water
1/4 cup olive oil
1/2 cup chicken broth
2 tablespoons cornstarch
2 tablespoons water (for slurry)

Put the seasoning packet on the chicken.

Add 2 tablespoons of apple cider vinegar to the chicken.

Pour in 1/4 cup of water.

Add 1/4 cup of olive oil to the mixture.

Mix well to coat the chicken with the marinade.

Marinate in the refrigerator for 30 minutes (optional).

Add 1/2 cup of chicken broth to the Instant Pot.

Seal the lid on the Instant Pot.

Pressure cook on high for 10 minutes.

Remove the chicken from the Instant Pot after cooking.

Make a cornstarch slurry by mixing 2 tablespoons of cornstarch with 2 tablespoons of water.

Set the Instant Pot to sauté mode and bring the remaining juices to a boil.

Pour the cornstarch slurry into the boiling juices.

Cook for 3 to 5 minutes until thickened, stirring occasionally.

Add the chicken back into the sauce and cook for an additional 2 minutes.
