This dish reflects the island's rich flavors, blending aromatic spices with the tender meat of conch. Traditionally enjoyed during festive gatherings, it showcases the Caribbean's love for bold, spicy dishes. Today, Curry Conch has found its way into various global kitchens, celebrated for its unique taste and cultural heritage.

Remove the eyes and tough claw-like structure from the conch.
Remove the outer darker parts of the conch to get the white meat.
Rinse the conch with water and cut into bite-sized pieces.
Season the conch with a pinch of salt and black pepper.
Add 1 tablespoon of green seasoning or substitute with powdered seafood seasoning.
Eyeball about 2 teaspoons of curry powder and add to the conch.
Heat 1 tablespoon of vegetable oil in a pan and add chopped garlic and onion.
Sauté until softened and fragrant, then add the curry powder and sauté until fragrant.
Add the marinated conch to the pan and cook down to meld flavors.
Pour in fresh coconut milk and cover the pot to let it simmer for 45 minutes to an hour.
Add diced carrots once the conch is tender.
Add fresh onion, sweet pepper, and scallion greens towards the end of cooking.
Add okra for texture and scotch bonnet pepper for heat.
Adjust seasoning with salt before serving.
