Today, momos have transcended borders, becoming popular in neighboring regions and beyond, with various adaptations reflecting local tastes.
all-purpose flour

Soak 8 grams of dried wood ear mushrooms in water.
Soak 50 grams of glass noodles in water.
Grate 100 grams of carrots.
Grate 250 grams of cabbage.
After soaking, dice the mushrooms.
After soaking the glass noodles, cut them into pieces; no need to dice finely.
Dice 2 green onions.
Add a bit of vegetable bouillon to enhance the flavor; skip this step if you don't like bouillon.
In a mixing bowl, combine 500 grams of flour and 1/2 teaspoon salt.
Gradually add 310 grams of lukewarm water while kneading until the dough becomes smooth.
Cover the dough with a lid and let it rise for 20 minutes.
Heat 35 grams of vegetable oil in a skillet.
Fry the diced onions first in the hot oil.
Add the vegetables we cut before and stir fry for 2 minutes on high heat.
Add a little bit of bouillon to the stir-fried vegetables.
Lower the heat and add 1/2 teaspoon white pepper and 1 teaspoon salt.
Add 1 tablespoon soy sauce to the mixture and stir well.
