Start by blending 2 cups of medjool dates until they form a dough-like consistency.
In a saucepan, combine 1 cup of peanut butter and 1/2 cup of maple syrup, heating on low until blended.
In a large mixing bowl, combine 2 cups of rolled oats and 1 cup of puffed rice.
Add the blended dates and the peanut butter mixture to the oats and puffed rice, mixing until combined.
Add in 1 teaspoon of vanilla extract and salt to taste, mixing thoroughly.
Split the mixture in half to make two different types of granola bars.
For the trail mix bars, add 1/4 cup each of pumpkin seeds, dried cranberries, chopped almonds, hemp seeds, and chia seeds, along with 1/2 cup of chocolate chips to one half of the mixture and mix well.
Press the trail mix mixture into a baking pan lined with parchment paper and place it in the freezer for a few minutes to set.
For the peanut butter and jelly bars, press half of the mixture into a baking pan, add a layer of homemade jam (made with berries, maple syrup, and chia seeds), then top with the remaining mixture and drizzle more jam on top.
Place the peanut butter and jelly bars in the freezer for 15 to 20 minutes to set.
