Start by blending 2 cups of medjool dates until they form a dough-like consistency.

In a saucepan, combine 1 cup of peanut butter and 1/2 cup of maple syrup, heating on low until blended.

In a large mixing bowl, combine 2 cups of rolled oats and 1 cup of puffed rice.

Add the blended dates and the peanut butter mixture to the oats and puffed rice, mixing until combined.

For the peanut butter and jelly bars, press half of the mixture into a baking pan, add a layer of homemade jam (made with berries, maple syrup, and chia seeds), then top with the remaining mixture and drizzle more jam on top.
