Introduce the dish and its appeal.
Gather ingredients: 400 ml milk, 130 g flour, 1 egg, 1 tablespoon vegetable oil, 1 teaspoon sugar, and 0.5 teaspoon salt.
Ensure all ingredients are at room temperature by taking them out of the fridge beforehand.
Wash the egg to remove any dirt.
Beat the egg with sugar and salt using a mixer until light and frothy. Alternatively, a whisk can be used.
Sift in the flour and add part of the room temperature milk and vegetable oil. Mix on low speed until smooth.
Pour in the remaining milk and mix again until combined.
Let the batter rest for 20 minutes to develop gluten. The batter should be slightly thick and flowing.
Adjust the batter consistency if necessary: add more milk if too thick, or more flour if too thin.
Before cooking, stir the batter again.
Heat a non-stick skillet over medium heat and grease it with vegetable oil.
Pour a ladle of batter into the skillet, swirling to coat the bottom evenly.
Cook the blin until golden brown on both sides.
Do not grease the skillet for subsequent blins.
The number of blins will depend on the skillet size.
For the filling, grate 150 g of cheese.
For the sauce, mix 50 g sour cream with 3 tablespoons cream cheese until well combined.
Place 2 tablespoons of cheese filling at the edge of a warm blin and fold it into an envelope.
Place the filled blins on a dry skillet and fry for 30 seconds on each side until golden brown.
Serve the filled blins with the sauce.
