3 cups brown sugar
1 1/4 teaspoons corn starch

Peel the ginger using a hand peeler.

Grate the ginger until you have a quarter cup of finely grated ginger.

In a large pot, add the water and grated ginger and bring to a boil over high heat (450°F or 232°C).

Once boiling, add the roasted peanuts, brown sugar, and corn starch to the pot and stir until well combined.

Add the cinnamon to the pot and stir again, then cover the pot and allow to boil for about 40 minutes, monitoring to prevent burning.

After 40 minutes, add the vanilla extract and stir until well combined.

Continue to boil uncovered for about 20 more minutes, stirring occasionally, until the mixture starts to separate and the syrup thickens enough to see the bottom of the pot.

Remove from heat when the mixture reaches 225-230°F and has thickened, then line a baking sheet with parchment paper.

Using a ladle, pour portions of the peanut mixture onto the lined baking sheet to form about 12 drops.

Allow the drops to cool at room temperature for a few hours or refrigerate to speed up the process before separating them from the parchment paper.
