The combination of sweet maple syrup and tangy mustard creates a delightful glaze that enhances the savory flavor of the ham. This dish has evolved over time, with variations seen across different regions, and remains a beloved centerpiece for festive gatherings.

Honey is a natural sweetener, while brown sugar and water mimic the sweetness of maple syrup.

Dijon offers a refined flavor, while yellow mustard is more budget-friendly.
Mix honey, maple syrup, mustard, and brown sugar in a bowl until the sugar dissolves.
Prepare a small shoulder ham, about 3.5 kg.
Slice about 10 centimeters down from the end of the ham, keeping the skin on.
Gently lift off the skin as a whole piece, leaving the fat on the ham.
Score the fat in a diamond pattern, being careful not to cut into the meat.
Insert a clove into each intersection of the scored fat.
Prepare a baking dish with a couple of layers of baking paper at the bottom.
Place the ham on a rack inside the baking dish to allow fat to drip through.
Brush about a third of the glaze over the top of the ham.
Bake in the oven at 170°C for 1 hour, basting every 20 minutes.
If cloves pop out, it's okay; just check the pattern after half an hour.
Wrap the end of the ham with tinfoil if there is shrinkage and bake for another 15-20 minutes.
Let the ham rest for 10-15 minutes before serving.
