1 pound pork sausage
1 onion
1 canned tomato puree
1 can diced tomatoes
3 tablespoons of oil
bow tie pasta
1 teaspoon of salt
1 teaspoon of pepper
1 teaspoon of oregano
1 teaspoon of basil
3 garlic cloves
1/4 teaspoon of chili flakes
2 tablespoons of parsley
1/2 cup of ricotta cheese
1/2 cup of italian cheese
1/2 cup of parmesan cheese

In a pot, heat 3 tablespoons of oil.

Add 1 chopped onion and sauté until translucent.

Add 3 minced garlic cloves and sauté for a couple of seconds, being careful not to burn it.

Add 1 pound of pork sausage and cook thoroughly until browned.

Season with 1 teaspoon of salt, 1 teaspoon of pepper, 1 teaspoon of oregano, 1 teaspoon of basil, and 1/4 teaspoon of chili flakes.

Add 1 canned tomato puree and mix until well combined.

Add 1 can of diced tomatoes and mix.

Pour in 6 cups of water and cover the pot with a lid.

Simmer for 20 minutes.

After 20 minutes, add bow tie pasta and simmer again for 15 minutes or until the pasta is completely cooked.

In a bowl, mix together 1/2 cup of ricotta cheese, 1/2 cup of italian cheese, and 1/2 cup of parmesan cheese until completely combined.

Add in some of the remaining 2 tablespoons of parsley to the cheese mixture.

Once the soup is done, plate and serve.
