Crispy Roast Pork

2 lbs pork belly
1 tbsp salt
1 tsp black pepper
1 tbsp rice vinegar
1 cup water

Poke a bunch of holes in the pork belly using a meat tenderizer, bamboo skewer, or the tip of a knife.

Brush vinegar on the top of the skin and sprinkle a little bit of salt to help draw out moisture.

Place the pork belly in the freezer uncovered for a minimum of 12 hours or overnight.

Add a little bit of water to a cooling rack and place the pork belly roast on top.

Roast the pork belly at 350°F for 45 minutes.

Lower the rack to the second from the bottom and increase the temperature to 450°F for another 2 hours.
