Crispy Roast Pork

2 lbs pork belly
1 tbsp salt
1 tsp black pepper
1 tbsp five-spice powder
2 tbsp soy sauce
1 tbsp rice vinegar
1 tbsp honey
1 cup water

Preheat the oven to 450°F (230°C).

Score the skin of the pork belly in a crosshatch pattern, being careful not to cut into the meat.

Rub the salt, black pepper, and five-spice powder all over the pork belly, including into the scored skin.

In a small bowl, mix the soy sauce, rice vinegar, and honey. Brush this mixture over the pork belly.

Place the pork belly on a rack in a roasting pan, skin side up. Pour the water into the bottom of the pan.

Roast the pork belly in the preheated oven for 30 minutes.

Reduce the oven temperature to 350°F (175°C) and continue roasting for another 1 hour, basting occasionally with the pan juices.

Increase the oven temperature back to 450°F (230°C) and roast for an additional 15-20 minutes, or until the skin is crispy and golden brown.

Remove the pork from the oven and let it rest for 10 minutes before slicing.

Serve the crispy roast pork with your choice of sides.
