Servings4
½ cup unsalted butter
½ cup powdered sugar
1 large egg
¼ tsp vanilla essence/extract
1 tsp white vinegar
a pinch of salt
1 ½ cups flour
½ tsp baking powder
1 cup sesame seeds, roasted
½ - ¾ cup pistachios, roughly chopped
2-3 tbsp honey, optional

butter

🥗Healthier: coconut oil

💰Cheaper: margarine

Coconut oil provides a dairy-free option and margarine is often less expensive.

sugar

🥗Healthier: honey

💰Cheaper: brown sugar

Honey adds natural sweetness while brown sugar can be more affordable.

eggs

🥗Healthier: flaxseed meal

💰Cheaper: egg substitute

Flaxseed meal is a vegan alternative and often cheaper than eggs.

vanilla extract

🥗Healthier: vanilla bean

💰Cheaper: vanilla essence

Vanilla bean enhances flavor naturally while essence is more economical.

1

Cream butter until light and fluffy. Then add the sugar and mix well.

2

Mix in the egg, vanilla essence, vinegar and salt until well incorporated.

3

Add the flour and baking powder and combine well using a beater or wooden spoon.

4

Cover and let it rest in the fridge for 30 minutes.

5

Make big or small balls according to your preference. I like mine big and crunchy.

6

Flatten the dough to about ¼ inch thick. The thinner the cookie is, the crunchier it will be.

7

Press one side of the dough into a bowl with the sesame seeds and the other with chopped pistachios.

8

Bake in a 350F preheated oven for about 20 minutes until the bottom is golden brown.

9

Let it cool for 5 mins on the cookie sheet then transfer to a wire rack to cool completely.
