Place rhubarb, sugar, and vanilla extract in a saucepan and cook on medium-high heat for approximately 15 minutes covered.
Remove from heat and set aside.
Preheat oven to 200 degrees Celsius (400 degrees Fahrenheit).
Pulse rolled oats in a blender until finer but not a fine flour.
In a medium bowl, combine oats, flour, sugars, ground cardamom, and baking soda, stirring to remove lumps.
Add softened and cubed butter to the mixture and rub it in until crumbly.
Add one large egg and mix with a hand mixer until combined.
Press two-thirds of the crumble mixture into an 8-inch (20 cm) cake tin, ensuring it's even.
Spoon in the rhubarb mixture, avoiding excess juice, and sprinkle remaining crumble on top.
Bake for approximately 25 minutes until golden.
Let cool before removing from the cake tin.
