Cut up carrots, potatoes, onions, and mushrooms into small sizes.
Pour beef broth into the crock pot as the base.
Add a soft red wine to the broth.
Mix in red currant jelly for flavor.
Season with salt, pepper, and Cajun seasoning.
Add a little water to the mixture.
Add the cut onions, carrots, mushrooms, and potatoes to the pot.
If desired, add jalapenos for heat.
Cover the crock pot and cook on high for 4 hours or on low if cooking all day.
To make gravy, pour Kentucky kernel flour into a bowl.
Add warm water to the flour and whisk until thick and smooth.
Pour the gravy mixture into the stew to thicken it.
