Heat a cast iron skillet over medium to medium-high heat.
Place venison stew meat in a bowl with self-rising all-purpose flour and stir to coat.
Sear the floured venison in the skillet until browned, doing this in batches.
Transfer the browned venison to a crock pot set on low heat.
Deglaze the skillet with 2 cups of water, scraping up the browned bits, and add this liquid to the crock pot.
Add 2 cans of cream of mushroom soup and French onion soup to the crock pot for gravy.
Season the mixture in the crock pot with about 1.5 tablespoons of black pepper and 3/4 tablespoon of kosher salt.
Add 2 cups of diced onion to the crock pot.
Add pre-sliced mushrooms to the crock pot (optional).
Stir the contents of the crock pot to combine all ingredients.
Cover the crock pot and cook for 4 to 4.5 hours.
After 1.5 hours, stir the mixture in the crock pot to ensure even cooking.
