Ingredients

  • 1 lb pork belly
  • 2 cups jasmine rice
  • 4 cups water
  • 1 tsp salt
  • 1 tbsp vegetable oil
  • 1/2 cup soy sauce
  • 1/4 cup rice vinegar
  • 1 tbsp sugar
  • 1/2 tsp black pepper
  • 1 cup pickled carrots
  • 1 cup pickled cucumbers
  • 2 green onions, chopped
  • 1 tbsp sesame seeds

Instructions

  1. 1Preheat the oven to 400°F (200°C).
  2. 2Score the skin of the pork belly in a crosshatch pattern, being careful not to cut into the meat.
  3. 3Rub the pork belly with salt and black pepper, ensuring the seasoning gets into the cuts.
  4. 4Place the pork belly on a baking sheet and roast in the oven for 30-40 minutes, or until the skin is crispy and golden brown.
  5. 5While the pork is roasting, rinse the jasmine rice under cold water until the water runs clear.
  6. 6In a pot, combine the rinsed rice, water, and 1 tsp of salt. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes or until the rice is cooked and water is absorbed.
  7. 7In a small bowl, mix together soy sauce, rice vinegar, and sugar until the sugar dissolves to create a sauce.
  8. 8Once the pork belly is done, remove it from the oven and let it rest for 10 minutes before slicing it into bite-sized pieces.
  9. 9To assemble the bowls, place a scoop of rice at the bottom, top with sliced pork belly, and drizzle with the soy sauce mixture.
  10. 10Add pickled carrots and cucumbers on the side, and garnish with chopped green onions and sesame seeds.
