1 3/4 cups whole meal Irish flour
1/2 teaspoon salt
quick cook oats
1/2 teaspoon baking soda
buttermilk
butter or clarified butter
gooseberry jam

Measure 1 3/4 cups of whole meal Irish flour into a bowl.

Add 1/2 teaspoon of salt to the flour.

Add some quick cook oats to the mixture.

Add 1/2 teaspoon of baking soda and rub out the lumps with your hands.

Pour in buttermilk until the mixture is like a loose batter.

Heat a griddle and add a little butter or clarified butter.

Dollop the batter onto the griddle and cook for about 4-5 minutes on one side.

Turn the scone over and cook on the other side, adjusting the heat if it gets too dark.

Serve with gooseberry jam and whipped cream.
