Irish Scones

2 cups all-purpose flour
1/4 cup granulated sugar
1 tbsp baking powder
1/2 tsp salt
1/2 cup cold butter, cubed
1 large egg
1/2 cup milk
1/2 cup currants (optional)
for serving blackberry jam (homemade)

Preheat the oven to 375°F.

In a bowl, combine all-purpose flour, granulated sugar, baking powder, and salt.

Grate cold butter into the dry ingredients using a cheese grater or cut it in with a pastry cutter.

If using currants, soak them in boiling water for about 20 minutes to rehydrate.

Add the soaked currants to the mixture.

Add an egg and some milk to the mixture and mix until it comes together, being careful not to overwork the dough.

Roll out the dough to about half an inch thick.

Use a biscuit cutter to cut out rounds from the dough and place them on a baking sheet.

Regroup any leftover dough to cut out more biscuits.

Brush the tops of the biscuits with milk and sprinkle with sugar.

Bake in the preheated oven for 25 minutes until golden brown.
