1 tbsp baking powder
1/2 tsp salt
1/2 cup unsalted butter, cold and cubed
1/2 cup milk
1 large egg
1/2 cup raisins or currants (optional)

Preheat your oven to 400°F (200°C).

In a large mixing bowl, combine the flour, sugar, baking powder, and salt.

Add the cold, cubed butter to the dry ingredients and mix until the mixture resembles coarse crumbs.

In a separate bowl, whisk together the milk and egg.

Pour the milk mixture into the flour mixture and stir until just combined. If using, fold in the raisins or currants.

Turn the dough out onto a lightly floured surface and knead gently until it comes together, about 1-2 minutes.
