Irish Scones

300g all purpose flour
90g butter (cold and cut into small pieces)
60g finely granulated sugar
2 1/4 tsp baking powder
1/2 cup raisins (optional)
180 ml cream
1 egg

Take a large mixing bowl and add all purpose flour (cold), butter (cold), baking powder, sugar and raisins.

Mix all the ingredients with clean hands or a pastry cutter until it turns to a bread-crumb like texture.

Whisk the egg and mix it with cream & vanilla.

Create a well in the centre of the dry ingredients in the bowl and add the cream and egg mixture.

Mix everything well and knead a medium soft dough.

Put the dough on a platform dusted with some flour.

Pat it with hands or with a rolling pin into a 1.5 to 2 inch thick disc.

Use a cookie cutter and cut out roundels.

Arrange them on a baking sheet lined with butter paper.

Brush the roundels with some cream and egg liquid mixture which is usually left at the bottom of the vessel.

Bake the scones for 18 to 20 minutes in the oven preheated to 190°C.

The top turns golden brown when done.

Cut the scones into halves and relish them with clotted cream, butter or strawberry jam.
