Irish Scones

1/2 cup cold butter (preferably Irish butter), cubed
1/2 cup milk
1 large egg

Gather your ingredients: all-purpose flour or self-raising flour, baking powder, sugar, salt, cold butter, milk or cream, and an egg.

In a large bowl, combine the flour, baking powder, sugar, and salt. Use a whisk or a spoon to mix these together thoroughly.

Incorporate the cold butter into the flour mixture using a box grater or your fingers, breaking it into small pieces until it resembles coarse breadcrumbs.

In a separate bowl, lightly whisk together the milk, cream, and egg. Pour most of this mixture into the flour and butter blend.

Using your clean hand, gently mix everything together until the dough starts to come together, being careful not to over mix.

Turn the dough out onto a lightly floured surface and knead it gently just a few times until it is smooth.

Pat the dough into a round disc about 3/4 of an inch to 1 inch thick.

Grab a round cutter about 2 to 2 1/2 inches in diameter and cut out your scones. Gather scraps, re-pat, and cut out more scones without overworking the dough.
