Slice 6 lbs of red onions in half and then thinly slice them using a KitchenAid mixer with an adjustable slicing blade.
Prepare a canning pot with enough jars to hold 8 pints of pickled onions.
Bring a large pot of water to a boil.
Add the sliced red onions to the boiling water and cook for 4 minutes, then drain and set aside.
In a separate bowl, combine 2 cups of apple cider vinegar, 1/2 cup of water, 3/4 cup of sugar, 1 tablespoon of pickling salt, 2 teaspoons of mustard seed, 1 teaspoon of celery seed, and 1/2 teaspoon of red chili flakes.
Pour the hot vinegar mixture over the drained onions in the jars, ensuring they are fully submerged.
Seal the jars and process them in a steam canner according to the manufacturer's instructions.
