180g (6.3 oz) castor sugar
3 large eggs, at room temperature
200g (7 oz) Self-Raising (SR) Flour
80g (2.8 oz) almond meal
400g (14 oz) Mixed fruit (cherries, raisins, lemon peel, etc.)
1 tsp fresh orange zest
Juice of 1 orange
1 tsp vanilla extract
2 tsp custard powder
Juice of 2 lemons
2 Tbsp Self Raising Flour Extra for coating
Melted butter (for brushing after baking)
