Preheat the oven to 160°C (320°F).
Grease and line a cake tin with parchment paper.
Cream the salted butter and castor sugar together until light and fluffy.
Add the eggs one at a time, mixing well after each addition.
Stir in the fresh orange zest and juice of 1 orange, followed by the vanilla extract.
Mix in the Self-Raising Flour and almond meal until just combined.
Add the custard powder and mix well.
Fold in the mixed fruit until evenly distributed.
Pour the batter into the prepared cake tin.
Bake in the preheated oven for 1 hour 15 minutes to 1 hour 30 minutes, or until a skewer inserted comes out clean.
Let the cake cool in the tin for 10 minutes before transferring to a wire rack.
Once cool, brush the top with melted butter.
