Cassava Oil Down with Pig Tails

Cut 6 salted pig tails into small pieces and wash off excess salt.

Place pig tails in a pot with water and boil on medium heat for about 30 minutes.

If pig tails are still salty, boil them again for an additional 15-20 minutes, discarding water in between.

Set boiled pig tails aside once done.

In a separate pot, heat cg chili infused coconut oil.

Add chopped onion and mini bell peppers to the pot, mixing well and allowing to sweat until tender and translucent.

Add minced garlic and allow to sweat until tender.

Incorporate chopped celery and scallions, mixing to build flavor.

Add cleaned, washed, and cut cassava to the pot and mix well, allowing to fry for about 5 minutes.

Add chopped spinach on top of the cassava without mixing it in.

Add Koya seasoning and then pour in coconut milk, mixing well.

Cover the pot and allow to simmer for about 40-45 minutes until cassava is tender and liquid reduces and thickens.

Check the consistency; if too thick, you can adjust by adding water or cooking longer for a thicker texture.

Once cooked, mix in a piece of butter if desired, and serve.
