Cauliflower with Garlic, Olives & Toasted Breadcrumbs

1 large head of cauliflower
4 cloves garlic, minced
1/2 cup pitted olives, chopped
1/2 cup breadcrumbs
1/4 cup olive oil
1/4 tsp red pepper flakes
1/2 tsp salt
1/4 tsp black pepper
2 tbsp fresh parsley, chopped
1 tbsp lemon juice

Preheat the oven to 400°F (200°C).

Cut the cauliflower into florets and place them in a large bowl.

In a small bowl, mix together the olive oil, minced garlic, red pepper flakes, salt, and black pepper.

Pour the olive oil mixture over the cauliflower florets and toss to coat evenly.

Spread the cauliflower on a baking sheet in a single layer and roast for 25-30 minutes, or until golden and tender.

While the cauliflower is roasting, heat a small skillet over medium heat and add the breadcrumbs.

Toast the breadcrumbs in the skillet, stirring frequently, until they are golden brown, about 3-5 minutes.

Remove the skillet from heat and stir in the chopped olives and parsley.

Once the cauliflower is done roasting, remove it from the oven and drizzle with lemon juice.
