juice of half a lime

Chop the cauliflower into fairly large pieces and wash it really well.

Put the cauliflower into a pan of lightly salted boiling water.

Bring back to the boil and cook for 4 minutes to soften it.

Drain the cauliflower and leave it to one side.

In the same pan on low heat, melt the butter.

Add the flour and mix constantly to make a roux.

Slowly add the milk until it thickens into a sauce, stirring constantly to prevent sticking and burning.

Once the sauce reaches the desired consistency, turn off the heat.

Add most of the grated cheddar cheese, leaving some for topping, and stir until melted.

Season the sauce with a sprinkle of nutmeg, salt, and pepper, and adjust the seasonings if needed.
