Chop the cauliflower into fairly large pieces and wash it really well.
Put the cauliflower into a pan of lightly salted boiling water.
Bring back to the boil and cook for 4 minutes to soften it.
Drain the cauliflower and leave it to one side.
In the same pan on low heat, melt the butter.
Add the flour and mix constantly to make a roux.
Slowly add the milk until it thickens into a sauce, stirring constantly to prevent sticking and burning.
Once the sauce reaches the desired consistency, turn off the heat.
Add most of the grated cheddar cheese, leaving some for topping, and stir until melted.
Season the sauce with a sprinkle of nutmeg, salt, and pepper, and adjust the seasonings if needed.
In an ovenproof dish, add the cauliflower and pour over the cheese sauce to coat everything well.
Top with the remaining cheese.
Put the dish into the preheated oven and bake for 25 to 30 minutes until the top is golden brown and bubbling.
For the cauliflower leaves, wash and thinly slice them.
Crush 2 to 3 garlic cloves.
In a frying pan or wok, heat around 1 tbsp of oil on high heat.
Add the garlic and fry for 10 seconds.
Add the sliced cauliflower greens and fry for 3 minutes.
Add 0.5 tbsp of light soy sauce and fry for another 1 to 2 minutes.
Once cooked, turn off the heat and squeeze the juice of half a lime over the greens.
