Remove the leaves from the whole cauliflower and place it on baking parchment.

Dust the cauliflower with turmeric, curry powder, a pinch of salt, and cracked black pepper.

Add a knob of butter on top of the cauliflower.

Wrap the cauliflower in the baking parchment, sealing it loosely, and cover with a couple of sheets of tin foil.

Place the wrapped cauliflower on a tray and bake in the oven at 190 degrees Celsius for about 45 minutes to 1 hour.

In the meantime, heat a saucepan to prepare the cheese sauce.

Reduce double cream in the saucepan by half.

Grate various cheeses (cheddar, parmesan, mozzarella) into a bowl.

Once the cream is reduced, remove it from heat and whisk in the grated cheeses until melted and creamy.

Add the remaining Philadelphia cheese and a dusting of smoked paprika to the cheese sauce and mix well.

After baking, open the tin foil and parchment to reveal the cauliflower, then cut it in half.

Pour the cheese sauce over the cauliflower and break up mozzarella to place on top.
