1

Take a microwave safe plate and cover it with a piece of parchment paper.

2

Place thin slices of aged cheddar cheese on the plate and heat it in the microwave until they turn nice and brown, about 1-2 minutes.

3

Let the cheese cool for around 5 minutes until they are nice and crisp, then set aside.

4

In a pot, bring around 6 cups of water to a boil and add 1.5 teaspoons of salt.

5

Drop the cauliflower florets into the boiling water, cover with a lid, and let cook for around 5 minutes until slightly soft.

6

Drain off the water completely from the cauliflower florets.

7

In a pan, heat 2 tablespoons of oil on high heat and add the cauliflower florets one by one to avoid adding residual water.

8

Sprinkle some salt and stir-fry the cauliflower until browned nicely, about 10 minutes.

9

Remove the browned cauliflower from the pan and set aside.

10

In the same pan, melt 2 tablespoons of butter over medium heat.

11

Add the finely chopped onions and stir-fry until translucent, about 1 minute.

12

Add the garlic powder and stir.

13

Add 2 tablespoons of all-purpose flour and stir-fry the roux for around 2 minutes until it turns light golden color.

14

Add the warm or room temperature milk to the pan and stir.

15

Add the powdered black pepper and crush the stock cube with your fingers, adding it to the mixture.

16

Add the aged cheddar cheese and stir until the sauce thickens, about 5-6 minutes, but do not let it get too thick as it will thicken further when cooled.

17

Add more salt if needed, then drop in the cauliflower florets and coat them well with the sauce.

18

If desired, cook a little longer to thicken the sauce further.

19

Add the shredded mozzarella cheese to the mixture.

20

Break the cheese crisps into pieces and sprinkle them over the top of the dish.

21

Garnish with finely chopped spring onion greens or chives and additional mozzarella cheese if desired.
