Cut the cauliflower into florets.
Rinse the cauliflower in the sink.
Coat the cauliflower with extra virgin olive oil in a large bowl.
Season with granulated onion, granulated garlic, sea salt, and black pepper.
Preheat the Ninja Woodfire to smoker mode at 350°F for 1 hour.
Place the seasoned cauliflower in the air crisp basket and smoke for 1 hour.
In a wide pan over medium heat, melt 4 tbsp of unsalted butter.
Add 4 tbsp of all-purpose flour and whisk for 2-3 minutes until slightly brown.
Slowly whisk in 1 cup of whole milk and 1 cup of heavy cream until smooth.
Add 1 tsp of salt, 1 tsp of nutmeg, 1 tsp of granulated onion, and 1 tsp of granulated garlic to the sauce.
Add half of the cheese mixture to the sauce and mix well, adjusting consistency with additional milk if needed.
Set the cheese sauce aside to keep warm.
After 1 hour, remove the cauliflower from the wood fire.
In a casserole dish, layer the cauliflower and pour the cheese sauce over it.
Top with additional cheddar and Gouda cheese.
Mix 2 cups of breadcrumbs with 1/2 cup of melted unsalted butter until it resembles wet sand.
Sprinkle the breadcrumb mixture on top of the cheese.
Return the dish to the wood fire at 350°F for about 30 minutes until bubbly and brown.
