Toss cauliflower in the egg wash using a wet hand, then coat in the panko mixture using a dry hand.
Spray the air fryer tray with non-stick spray.
Spray the coated cauliflower with non-stick spray for extra crispiness.
Air fry the cauliflower at 350 degrees for 10 minutes, shaking the basket halfway through.
In a bowl, whisk together water, hoisin sauce, soy sauce, and sugar, and bring to a boil.
Make a slurry by whisking together rice vinegar, cornstarch, McCormick ginger, garlic, and crushed red pepper.
Add the slurry to the boiling hoisin mixture and stir until thickened.
Remove the cauliflower from the air fryer and toss it in the sauce until coated.
