Combine 1/2 cup bread flour, 1 teaspoon dry active yeast, and 1 teaspoon sugar in a bowl.
Add 1/2 cup warm water and let sit until frothy, about 5 minutes.
Stir in 3/4 teaspoon kosher salt and 1 tablespoon olive oil.
Gradually add 1 cup bread flour, mixing until a dough forms.
Knead the dough on a floured surface until smooth, adding more flour as needed, about 10 minutes.
Cover the dough and let rise in a warm place until doubled, about 1 hour.
Preheat the oven to a high temperature, around 475°F (245°C).
Divide the dough into equal portions and roll each into a thin circle.
Place the rolled dough on a baking stone or baking sheet.
Bake until puffed and lightly browned, about 3-5 minutes.
