In a mixer, combine 3/4 cup unsalted butter and 1 8 oz block of shredded sharp cheddar cheese.
Shred the cheese yourself on a box grater, as pre-shredded cheese won't work well for this recipe.
Mix the butter and cheese at room temperature until emulsified.
Add 1 teaspoon of salt, 1/2 teaspoon of garlic powder, and cayenne pepper (1/2 to 1 teaspoon depending on desired spiciness) to the mixture.
Incorporate 2 cups of all-purpose flour into the mixture and mix until a dough forms.
Once the dough is scoopable, remove it from the beater blade.
Use a cookie scoop (about 1 1/2 to 2 tablespoons) to scoop the dough onto a parchment-lined sheet pan.
Optionally, press down on the dough with the back of a fork to create a design on top.
Bake in a preheated 350°F oven for 20 to 30 minutes until the cheese is toasted and has a nutty flavor.
