Add 10 grams of yeast and 150 grams of sugar to a bowl with flour and salt.
Mix the dry ingredients together.
Add 2 eggs to the mixture, reserving the third egg for later.
Slowly add milk to the mixture until it reaches a sticky consistency.
Knead the dough for about 15 minutes until smooth and elastic, adding flour as needed to prevent sticking.
Work room temperature butter into the dough until fully incorporated, adding more flour as necessary.
Place the dough in a container and let it rise for about 40 minutes until elastic and bouncy.
After 30 minutes of rising, cut the dough into three equal parts and shape them into balls.
Roll out each piece of dough into a square shape on a floured surface.
Spread 200 grams of smoked ham evenly over the rolled-out dough.
Add smoked bacon on top of the ham, spreading it out evenly.
Sprinkle olives and raisins over the meat as desired.
Fold the sides of the dough inwards, then roll it tightly from one end to the other to form a log.
Roll out a small piece of dough to make a decorative top for the bread.
Use water to help the decorative piece stick to the top of the bread.
Cut small slots in the decorative piece for visual appeal and to allow steam to escape during baking.
Place the rolled bread on a baking tray and let it rest for 30 minutes in a warm place.
Preheat the oven to 170°C (338°F).
Bake the bread for 25 minutes.
Prepare an egg wash by mixing one egg with sugarcane honey or molasses.
After 25 minutes, remove the bread from the oven and brush it with the egg wash.
Return the bread to the oven for an additional 15 minutes until golden brown.
