Pour water, salt, sugar, and cubed butter into a pot.
Heat the mixture until it boils, stirring well.
Remove from heat and add sifted flour, mixing quickly with a wooden spoon.
Return to low heat, stirring continuously until the mixture forms a ball and comes away from the sides of the pot.
Pour the mixture into a glass container and let it cool.
Once cooled, add eggs one by one, mixing vigorously until fully incorporated.
Continue mixing until you achieve a thick, creamy, and slightly elastic mass.
Pour the prepared mixture into a pastry bag with a toothed tip, or grease two spoons with oil to form small balls.
Heat plenty of oil in a pan on low heat.
Pipe the mixture directly into the hot oil, frying until beautifully rich brown.
Carefully remove from oil and place in cold syrup for 3-5 minutes.
To make the syrup, bring sugar and water to a boil for about 5-10 minutes, then add lemon juice and let it cool.
Arrange the tulumba on a plate and serve.
