حساء لسان عصفور

حساء لسان عصفور هو طبق تقليدي في تونس، يُعتبر من الأطباق الشهية التي تُقدم في المناسبات العائلية. يُعبر عن كرم الضيافة ويجمع بين النكهات الغنية والمكونات الصحية. اليوم، أصبح هذا الحساء محبوبًا في جميع أنحاء العالم العربي، مع وجود نسخ متنوعة تتماشى مع المكونات المحلية.

Canned beans are a cost-effective protein alternative.
Start by boiling 1.5 liters of water in a large pot.
Add 1.5 tablespoons of concentrated tomato paste to the boiling water.
Add 1 tablespoon of chopped onion and 1 tablespoon of minced garlic to the pot.
Add the spices: quarter teaspoon black pepper, quarter teaspoon turmeric, half tablespoon red pepper, and half tablespoon salt.
Mix everything well until the tomato paste is fully dissolved in the water.
Add chickpeas that have been soaked for 15 minutes.
Add 300 g of lamb to the pot.
Add a little parsley and celery to the mixture.
Mix everything together and reduce the heat to low.
Cover the pot and let it cook for 45 minutes.
After 45 minutes, remove the parsley and celery from the soup.
If the broth has reduced too much, add a little hot water.
Add the sparrow tongue soup to the pot and blend gently and continuously.
Remove the bones from the lamb and return the boneless meat to the soup.
Season with a little black pepper for taste.
Mix the soup gently and ensure it retains enough broth, as it should not be too thick.
Turn off the heat and serve the soup.
