Start by getting a good fire going in the pizza oven.
Empty the bag of mussels over running water and scrub thoroughly to remove any beard, barnacles, or other debris.
Inspect mussels for any broken ones and remove them.
Rinse and clean the mussels, then set them aside.
In a cast-iron pan, add half a stick of butter and melt it.
Add 1 large leek (thinly sliced) and half an onion (finely chopped) to the melted butter.
Add some mashed garlic to the pan and cook until the leeks and onions are soft, about 7 minutes.
Pour in 1 cup of white wine and add any remaining wine from the bottle to the pan.
Return the pan to the pizza oven and reduce the wine until it's about half.
Add the cleaned mussels to the pan and cover it, cooking for about 90 seconds.
After 2 minutes, stir the mussels and remove any that have not opened.
Add another half stick of butter, 2 tablespoons of parsley, and about half a cup of heavy whipping cream to the mussels.
Stir to combine and serve.
