Cube Canadian bacon and add to slow cooker.

Dice 5 medium potatoes and 1 large carrot, then add to slow cooker.

Pour in 4 cups of chicken broth.

Add 1 cup of evaporated milk and 0.5 cup of barley to the slow cooker.

Season with 0.25 teaspoon of ground thyme, 1 teaspoon of Italian seasoning, and 2 teaspoons of dried parsley.

Set slow cooker on high for 4.5 hours.

Add garlic and salt close to the end of cooking time.

Check that potatoes are tender and bacon comes apart easily before serving.
