1 onion
1 carrot
1 garlic clove
170g | 1 cup cooked rice
1 tbsp olive oil
1 tsp ground coriander
1 tsp Italian herbs
salt to taste
1 tbsp tomato puree
1 tsp sugar (optional)
1 tsp flour
pinch of salt
black pepper to taste
250ml | 1 cup water
fresh dill

Soak 190g | 1 cup green lentils in water for 3 hours.

Drain lentils and add to a bowl.

Mash lentils with a hand blender.

Chop 1 onion and transfer to a lightly oiled frying pan.

Peel and grate 1 carrot and add to the pan; cook for about 5 minutes.

Chop 1 garlic clove and combine with the carrot and onion in the pan.

Add 170g | 1 cup cooked rice to the mashed lentils.

Add the cooked carrot and garlic mixture to the lentils.

Season with 1 tsp ground coriander, 1 tsp Italian herbs, and salt to taste; mix until combined.

Heat a little olive oil in a non-stick skillet.

Fry the lentil meatballs for about 5 minutes on each side, or until golden and crispy.

In a mixing jar, combine 1 tbsp tomato puree, 1 tsp sugar (optional), 1 tsp flour, a pinch of salt, black pepper to taste, and 250ml | 1 cup water; mix well.
