Today, variations may include different types of meat or beans, but the essence remains the same: a hearty, flavorful meal that warms the soul.

Chicken is leaner and often more affordable.
Start by cooking the lentils in water with a little salt until tender, about 20-25 minutes.
Chop the onion and fry it in a little oil until golden brown to add flavor to the lentils.
Chop the tomato and add it to the fried onion, cooking until softened.
Boil the tomatillos in water until soft, about 10 minutes, then remove them from heat.
Cut the beef into small cubes and season with salt.
Fry the bacon until crispy, then remove it from the pan, leaving the fat.
In the same pan, add the beef and fry until browned on all sides, about 5-7 minutes.
Remove excess bacon fat from the pan if necessary, leaving just enough to sauté the onions.
Add the chopped green onions to the pan and sauté until soft.
Prepare the salsa by boiling tomatillos, serrano peppers, and garlic together until soft, then blend with chicken broth until smooth.
Add the salsa to the beef in the pan and let it simmer for a few minutes.
Add the cooked lentils to the beef mixture and stir to combine, letting it simmer for an additional 5 minutes.
Serve the dish hot, garnished with crispy bacon, cilantro, and radishes.
