Soak lentils in water for at least 12 hours and rinse well.

Chop onion, carrot, and red bell pepper.

Heat olive oil in a pot on a glass ceramic stove until hot.

Add chopped onion to the pot and sauté.

Add bay leaves and chopped red bell pepper to the pot.

Add potato to the pot to help thicken the stew.

Pour in hot water to cover the vegetables and lentils.

Add 350 g of lentils to the pot.

Add a tablespoon of smoked paprika, cumin, and black pepper to the pot.

Cut Spanish chorizo into large pieces and add to the pot.

Cover the pot and cook for about 15 minutes until lentils are tender.

Add salt to taste and adjust seasoning with red wine vinegar before serving.
