Originating from Uganda, this dish reflects the country's rich culinary traditions, often enjoyed during communal meals and celebrations. The use of coconut milk adds a creamy texture, while the spices bring warmth and depth. Today, Ugandan Chicken has gained popularity beyond its borders, celebrated for its unique flavor profile and comforting qualities.

Cut the whole chicken into pieces and season with salt and black pepper.
Heat vegetable oil in a large pot over medium heat until shimmering.
Add the chicken pieces and brown on all sides, about 5-7 minutes.
Remove the chicken and set aside, leaving the oil in the pot.
Add chopped onions, garlic, and ginger to the pot; sauté until onions are translucent, about 3-4 minutes.
Stir in chopped tomatoes and green bell pepper; cook until tomatoes soften, about 5 minutes.
Add diced carrots and cook for another 3 minutes.
Return the chicken to the pot and pour in the chicken broth and coconut milk.
Add coriander, cumin, paprika, and salt; stir to combine.
Bring the mixture to a simmer, then cover and cook for 30-40 minutes until the chicken is cooked through.
Check for doneness; the internal temperature should reach 165°F.
Remove the lid and let the sauce reduce for another 5-10 minutes if it's too thin.
Stir in lime juice and adjust seasoning if necessary.
Garnish with fresh cilantro before serving.
