Preheat the oven to 350°F (175°C).
Line a baking sheet with parchment paper.
In a mixing bowl, combine garbanzo bean flour, coconut flour, baking powder, salt, cinnamon, and nutmeg.
In another bowl, cream together butter and sugar until light and fluffy.
Add the egg and vanilla extract to the butter mixture, mixing until well combined.
Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms.
If desired, mix in food coloring to create fun colors for the crackers.
Roll out the dough between two sheets of parchment paper to about 1/4 inch thick.
Cut out animal shapes using cookie cutters and place them on the prepared baking sheet.
Sprinkle with sprinkles or chocolate chips if desired.
Bake for 10-12 minutes, or until the edges are golden brown.
Remove from the oven and let cool on a wire rack.
Store in an airtight container once cooled.
