In a saucepan, combine water, butter, sugar, and salt; bring to a boil.

3

Add flour to the boiling mixture and stir vigorously until a smooth dough forms.

4

Remove from heat and let cool slightly before adding eggs one at a time, mixing until fully incorporated.

5

Transfer the dough to a piping bag fitted with a large round tip.

6

Pipe small rounds onto a baking sheet lined with parchment paper, spacing them apart.

7

Bake for 20-25 minutes until puffed and golden brown; do not open the oven door during baking.

8

Remove from the oven and let cool completely on a wire rack.

9

In a mixing bowl, whisk together egg yolks, sugar, vanilla essence, corn flour, and flour.

10

Gradually add whole milk to the mixture and stir until combined.

11

Cook the mixture over medium heat until thickened, stirring constantly; remove from heat and stir in butter.

12

Whip heavy cream until soft peaks form and fold into the custard mixture.

13

Carefully slice the cooled puffs in half and fill with custard cream.

14

Melt chocolate and drizzle over the filled cream puffs, or dip the tops in chocolate.

15

Chill briefly to set the chocolate before serving.
